This mead is closer in style to the traditional meads that some people have experienced in Europe. It is an exciting new alternative to dessert wines and should be something to talk about at the holiday dinner table too. Sweet floral honey notes lead into a long finish that is well appreciated alone or with your favourite desserts. Sweetness Code 8
Bob wanted to do a mead that highlighted the varietal honeys that are produced on Vancouver Island. The main varieties are Fireweed, Wildflower, and Blackberry. These three varietals were blended into a sweet mead that was then fortified with distillate produced for us at Victoria Spirits. He was so pleased with the outcome we named it Vintage Sac as it was made with a good vintage of honey in a year when the weather made for a plentiful crop of varietal honeys.
